Farofa!
From previous posts I'm guessing that Nando will fast become a popular topic on this forum :) I enjoy his vids, and I think its interesting to hear his accent, as its Brazilian/UK, which we don't hear a lot here in San Francisco. Here's a video of his that concerns one of my favourite Brazilian staples, yellow farofa.
Farinha is how we call when we eat it straight from the package... not fried. I love it like that with feijoada!!
Then when we cook it... fried in many different ways, we call it farofa. The way he does in the video above is the basic and one of the most delicious in my opinion. You can add stuff to make it even better:
Before putting the farinha, when you have only the butter and onions, try adding sausage, or salami, or 'carne de sol / carne seca' (a Brazilian jerky beef kinda meat) , eggs, and whatever you can think of. Then add the farinha... you will have a great side dish to serve with the meal. If you didn't add eggs in the frying afrinha, you can also boil eggs separetely, and after the farofa is ready, you cutt eggs slices and add to the farofa...yummy! In my house, we also serve it as an appetizer... goes great with beer, and BBQ steak!
Ah!!! You can also cook farinha like this: boil water. when the water is really bubly, add farinha.... in my home we call it: Farofa de bola (Farofa's balls)...
Or add farofa to the any kind of sauce/broth ... let's say you are cooking beef... as in a stew... add extra water so you have lots of broth.... after the broth is ready, take part of this beef broth (without any pieces of beef), and add farinha little by little -this is very imporatnt- while the sauce is very hot. Or do the same with a fish broth. Don't step away after you start adding the farinha...it cooks fast! The farinha will get thick. If it doesn't get thick enough - maybe there was not enough farinha added- add a little bit more, or if you have it anymore, a little bit of starch). We call it "pirão", and it's one of my favorite farinha's dishes.

Oh I love farofa! Just put in on EVERYTHING! Well maybe not my salad...
