We recently put up a video on tips to make the most out of your beach experience in Brazil.  However, one cannot fit everything into a mere 5 minute video. This leads me to pose a very important question:  what is your favorite part of the beach in Brazil?
Mine personally is caldinho, a black bean soup with a couple "goodies" added in including quails eggs, charque (dried steak often with a delicious resemblance to bacon bits), an olive, and other delicious things.  Be sure to ask your local friend for their favorite caldinho person on the beach--they generally walk around and have signs or shirts with their nickname.

Oh, I love caldinho with cold beer and peanuts. I love the fried cheese at the beach. Caipifrutas are so delicious. I also love how going to the beach in Brazil is such a social activity and you are certain to meet your friends there every weekend :)

Mmmmm, we don't have "caldinho" in the South! Not fair! I love água-de-côco, "casquinha-de-siri" (stuffed crab shells) and caipiroskas (caipirinhas made with vodka instead of cachaça). Já estou com saudades das praias do Brazil!

Are there more permanent stalls or huts i guess at the beach where food and such is sold or is more of  a vendor style arrangement?

Oi!
It depends on where you are. In Recife, the vendors have a  cart that they bring to the beach every day. They always park their carts at the same spot. Some mark the spot with flags and the like. So when we go to the beach, we always go to the same spot and buy from the same person.
In other beaches, like Calhetas which is south of Recife, there are fixed structures -- brick and mortar bars/restaurants. They put tables and chairs right on the sand for you.
In Fortaleza, it is totally different from Recife. There are brick and mortar big bars/restaurants that spread hundreds of tables and chairs along the beach.
I hope that answers your question!

And FYI with a bit of driving, you will also find pristine beaches in Brazil with NO ONE there, if that is what you are in the mood for. Just you and the fishies :)  Brazil has everything!

You know, there are lots of foreigners who visit Brazil and decide to stay. In all the small beach towns we see businesses owned by foreigners. We Brazilians say: "Let's eat in the pizza place of the Peruvian guy today." or "Let's go to the crepes place of the Argentinian", and so on. Lots of Europeans and South Americans.

Yummy...
you are all right!
Carl: I love Caldinho !!! That is the best part of the beach for me.
Betania: I also prefer caipiroska (with vodka) than caipirinha (made with cachaça)!!!
Lu: My second favorite on the beach is queijo de coalho assado!!!!  (fried cheese in the skewers)
after all that....ahhhhhhh!!! if I am in one of the beaches Carls mentioned...almost completeley deserted... then I go for a long and warm swim... if it is a city beach... party time with the many friends I will certainly run into!

Yes, it is the same thing. Coalho is the type of chesse, like you have  cheddar and others here. Coalho is a Brazilian white cheese, the kind you had at the beach and in the tapioca.
Queijo assado na brasa = chesse baked or cooked on the bbq pit :)
Na brasa is what tells you it is bbq style.
